• Ask for 'kuru baklava' (less syrup) for flying — it keeps ~10 days unrefrigerated vs 2-3 days for fresh
• Sold by weight; the counter will build a mixed box — pistachio costs more than walnut, sadly the pistachio is the point
• Beware lookalike 'Güllüoğlu' shops around town — the family name split into competing businesses; Karaköy Güllüoğlu (Nadir Güllü) at the Karaköy address is the benchmark
• Carry-on it — checked baggage handling turns baklava layers into syrup rubble
